- 1 cup powdered sugar
- 1โ2 tablespoons lemon juice
- 1 teaspoon lemon zest
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper.
- 2. Beat butter and powdered sugar until light and creamy.
- 3. Add lemon zest and lemon juice; mix until combined.
- 4. Whisk flour, cornstarch, and salt in a separate bowl.
- 5. Add dry ingredients to the butter mixture and mix until a soft dough forms.
- 6. Scoop teaspoon-sized balls of dough and place on the baking sheet.
- 7. Flatten each slightly with your fingers or the bottom of a glass.
- 8. Bake for 10โ12 minutes or until edges are just barely golden.
- 9. Whisk together glaze ingredients until smooth.
- 10. Once completely cooled, dip or drizzle cookies with the lemon glaze.
- 11. Allow glaze to set before serving.
Notes
- Cornstarch creates the signature โmeltawayโ texture donโt skip it.
- For extra lemon flavor, double the zest.
