Ingredients
For the biscuits:
1 cup (2 sticks) unsalted butter, softened
1/2 cup powdered sugar
1 tsp vanilla extract
2 tbsp lemon zest
2 cups all-purpose flour
1/4 tsp salt
For the lemon filling:
1/4 cup unsalted butter, softened
1 cup powdered sugar
1 tbsp lemon juice
1 tsp lemon zest
Instructions
1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. In a large bowl, cream together the butter and powdered sugar until light and fluffy.
3. Add vanilla extract and lemon zest, mixing to combine.
4. Gradually add flour and salt, mixing until a soft dough forms.
5. Roll the dough into 1-inch balls and place on prepared baking sheets, flattening each slightly with your palm or a fork.
6. Bake for 10–12 minutes or until the edges are just beginning to turn golden.
7. Let biscuits cool completely on a wire rack.
8. For the filling, beat butter until smooth, then add powdered sugar, lemon juice, and zest. Beat until fluffy and spreadable.
9. Spread a small amount of filling on the flat side of one biscuit, then top with another to form a sandwich.
10. Repeat with remaining biscuits and filling.
Notes
Chilling the dough for 20 minutes before baking can help maintain the biscuit shape.
Use a piping bag to apply the filling neatly and evenly.
Store in an airtight container at room temperature for up to 4 days.
Add a few drops of yellow food coloring to the filling for a more vibrant lemon look, if desired.
