- 1 cup powdered sugar
- 1 tbsp lemon juice

Instructions
- 1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- 2. In a large bowl, cream together the butter and powdered sugar until light and fluffy.
- 3. Add vanilla extract and lemon zest, mixing to combine.
- 4. Gradually add flour and salt, mixing until a soft dough forms.
- 5. Roll the dough into 1-inch balls and place on prepared baking sheets, flattening each slightly with your palm or a fork.
- 6. Bake for 10–12 minutes or until the edges are just beginning to turn golden.
- 7. Let biscuits cool completely on a wire rack.
- 8. For the filling, beat butter until smooth, then add powdered sugar, lemon juice, and zest. Beat until fluffy and spreadable.
- 9. Spread a small amount of filling on the flat side of one biscuit, then top with another to form a sandwich.
- 10. Repeat with remaining biscuits and filling.
Notes
- Chilling the dough for 20 minutes before baking can help maintain the biscuit shape.
- Use a piping bag to apply the filling neatly and evenly.
- Store in an airtight container at room temperature for up to 4 days.
- Add a few drops of yellow food coloring to the filling for a more vibrant lemon look, if desired.
