Description
Adorably sweet mini strawberry tarts made with buttery shells and filled with creamy custard and fresh strawberries. Perfect for spring parties, afternoon tea, or elegant desserts.
Ingredients
12 mini tart shells (store-bought or homemade)
1 cup pastry cream or vanilla pudding
1 cup fresh strawberries, hulled and sliced
1 tablespoon apricot jam or honey (for glaze)
1 teaspoon water
Optional: mint leaves or powdered sugar for garnish
Instructions
1. Pre-bake the tart shells according to package directions or your preferred homemade recipe. Let cool completely.
2. Spoon or pipe pastry cream or pudding evenly into each tart shell.
3. Arrange sliced strawberries on top of the cream in a decorative pattern.
4. In a small bowl, mix apricot jam or honey with water and microwave for 10–15 seconds to thin it.
5. Brush the strawberry tops with the glaze for shine.
6. Garnish with mint leaves or a dusting of powdered sugar, if desired.
7. Chill tarts in the fridge for 20–30 minutes before serving.
Notes
For best results, assemble the tarts just before serving to keep the shells crisp.
Use a variety of berries for a colorful variation.
Homemade pastry cream adds extra richness, but vanilla yogurt or whipped cream can be used in a pinch.
