Description

A flavorful and Moist Strawberry Banana Cake bursting with fresh fruit and a tender crumb—topped with cream cheese frosting or served plain for a lighter treat.


Ingredients

1 1/2 cups mashed ripe bananas (about 3 large)

1 cup chopped fresh strawberries

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon (optional)

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1 tsp vanilla extract

1/2 cup sour cream or Greek yogurt

Optional cream cheese frosting:

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

2 cups powdered sugar

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 8-inch round pans.

2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.

3. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.

4. Beat in eggs one at a time, then mix in vanilla extract, mashed bananas, and sour cream.

5. Gradually stir in the dry ingredients until just combined.

6. Gently fold in chopped strawberries.

7. Pour batter into prepared pan and smooth the top.

8. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

9. Let cake cool completely before frosting.

10. To make frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, and beat until fluffy. Spread over cooled cake.

Notes

Use very ripe bananas for best flavor and moisture.

Cake can also be made into cupcakes—bake for 18–22 minutes.

Store frosted cake in the refrigerator for up to 4 days.
