Easy, chewy no-bake chocolate oatmeal bars layered with a buttery oat mixture and rich chocolate-peanut butter filling perfect for snacks, dessert, or meal prepping.

- 1 cup unsalted butter
- 1 cup brown sugar, packed
- 1 tsp vanilla extract
- 3 cups quick oats
- 1/2 tsp salt

- 1 cup semisweet chocolate chips
- 1/2 cup creamy peanut butter
Instructions
- 1. Line an 8×8 or 9×9-inch pan with parchment paper.
- 2. In a medium saucepan, melt butter and brown sugar over medium heat, stirring until smooth and combined.
- 3. Stir in vanilla, salt, and oats. Cook for 2โ3 minutes until the oats are well coated.
- 4. Press half of the oat mixture firmly into the bottom of the prepared pan.
- 5. In a microwave-safe bowl, melt chocolate chips and peanut butter in 20โ30 second intervals, stirring until smooth.
- 6. Spread the chocolate mixture evenly over the bottom oat layer.
- 7. Crumble or drop the remaining oat mixture over the top and gently press it down.
- 8. Refrigerate for at least 2 hours, or until fully set.
- 9. Lift bars out using parchment paper and slice into squares.
Notes
- Use rolled oats for a chewier texture, or quick oats for a softer bar.
- Bars store well in the fridge for up to 1 week or the freezer for up to 2 months.
- Add chopped nuts, shredded coconut, or a pinch of cinnamon for extra flavor.
