Description
Soft and chewy oatmeal cookies made without butter—perfectly delicious using oil and brown sugar, with a hint of cinnamon.
Ingredients
1/2 cup vegetable oil or melted coconut oil
3/4 cup brown sugar, packed
1/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1 1/2 cups old-fashioned oats
1/2 cup raisins or chocolate chips (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix together the oil, brown sugar, and granulated sugar until smooth.
3. Add the eggs and vanilla extract; mix until fully combined.
4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
6. Fold in oats and optional raisins or chocolate chips.
7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet.
8. Bake for 10–12 minutes, or until edges are golden and centers are set.
9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
You can substitute coconut oil for a subtle tropical flavor.
For a dairy-free version, ensure your chocolate chips are dairy-free.
Add chopped nuts for extra texture.
Cookies will stay soft for several days if stored in an airtight container.
