- 1/2 cup vegetable oil or melted coconut oil
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 1/2 cups old-fashioned oats
- 1/2 cup raisins or chocolate chips (optional)
Instructions
- 1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- 2. In a large bowl, mix together the oil, brown sugar, and granulated sugar until smooth.
- 3. Add the eggs and vanilla extract; mix until fully combined.
- 4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- 5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- 6. Fold in oats and optional raisins or chocolate chips.
- 7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet.
- 8. Bake for 10–12 minutes, or until edges are golden and centers are set.
- 9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- You can substitute coconut oil for a subtle tropical flavor.
- For a dairy-free version, ensure your chocolate chips are dairy-free.
- Add chopped nuts for extra texture.
- Cookies will stay soft for several days if stored in an airtight container.
