A light and airy Pavlova Roll filled with whipped cream and fresh berries, perfect for an elegant dessert.

- 4 large egg whites, room temperature
- 1 cup granulated sugar
- 1 tsp cornstarch
- 1 tsp white vinegar
- 1 tsp vanilla extract
- 1 cup heavy cream, chilled
- 2 tbsp powdered sugar
- 1 cup mixed fresh berries (strawberries, raspberries, blueberries)
- Extra powdered sugar, for dusting
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC). Line a 10×15-inch jelly roll pan with parchment paper.
- 2. Beat egg whites with an electric mixer until soft peaks form. Gradually add sugar, beating until stiff, glossy peaks form.
- 3. Gently fold in cornstarch, vinegar, and vanilla extract.
- 4. Spread meringue evenly into prepared pan. Bake for 20 minutes, until lightly golden.
- 5. Remove from oven and cool for 5 minutes. Invert onto a clean sheet of parchment paper dusted with powdered sugar. Peel off the baking paper carefully.
- 6. Whip heavy cream with powdered sugar until soft peaks form.
- 7. Spread whipped cream over the cooled meringue and scatter fresh berries evenly on top.
- 8. Using the parchment to help, roll the pavlova tightly into a log shape.
- 9. Dust with powdered sugar before slicing and serving.
Notes
- For best results, use room temperature egg whites to achieve maximum volume.
- You can vary the filling by adding lemon curd, chocolate shavings, or passionfruit pulp.
- This dessert is best enjoyed the same day to keep the meringue crisp on the outside and soft inside.
