- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- Extra sugar for rolling
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper.
- 2. Whisk flour, baking soda, baking powder, and salt in a bowl.
- 3. Cream butter and sugar together until light and fluffy.
- 4. Add egg, lemon juice, lemon zest, and vanilla; mix until smooth.
- 5. Add dry ingredients to wet ingredients and mix just until combined.
- 6. Scoop tablespoon-sized dough balls and roll in granulated sugar.
- 7. Place on baking sheets and gently flatten each ball slightly.
- 8. Bake for 9โ11 minutes or until edges are set but centers remain soft.
- 9. Cool on the baking sheet for 5 minutes before transferring to a rack.
Notes
- For stronger lemon flavor, add a drop of lemon extract or more zest.
- Chilling the dough for 20โ30 minutes helps prevent spreading.
- Cookies stay soft for several days when stored in an airtight container.
