Description

A wonderfully moist, subtly sweet pistachio bread with a tender crumb and rich nutty flavor. Perfect for breakfast, snacks, or as a thoughtful gift.


Ingredients

1 ½ cups All-purpose flour
1 cup Granulated sugar
1 cup Shelled pistachios
2 tsp Baking powder
½ tsp Salt
2 large Eggs
½ cup Milk
½ cup Vegetable oil
1 box Pistachio pudding mix
1 tsp Vanilla extract


Instructions

  1. Preheat oven to 350°F. Grease a 9×5 inch loaf pa
  2. In a large bowl, whisk together flour, sugar, chopped pistachios, baking powder, salt, and dry pudding mix
  3. In another bowl, whisk eggs, milk, oil, and vanilla
  4. Pour wet ingredients into dry ingredients. Stir gently until just combined
  5. Pour batter into prepared pan. Sprinkle extra chopped pistachios on top
  6. Bake 50-60 minutes until toothpick comes out clea
  7. Cool in pan 15 minutes, then transfer to wire rack

Notes

Use room temperature eggs and milk for smoother batter.

Do not overmix batter – stir until flour just disappears.

For best results, cool completely before slicing.

Store in airtight container at room temperature for up to 3 days.
