Description
A wonderfully moist, subtly sweet pistachio bread with a tender crumb and rich nutty flavor. Perfect for breakfast, snacks, or as a thoughtful gift.
Ingredients

1 ½ cups All-purpose flour
1 cup Granulated sugar
1 cup Shelled pistachios
2 tsp Baking powder
½ tsp Salt
2 large Eggs
½ cup Milk
½ cup Vegetable oil
1 box Pistachio pudding mix
1 tsp Vanilla extract
Instructions
- Preheat oven to 350°F. Grease a 9×5 inch loaf pa
- In a large bowl, whisk together flour, sugar, chopped pistachios, baking powder, salt, and dry pudding mix
- In another bowl, whisk eggs, milk, oil, and vanilla
- Pour wet ingredients into dry ingredients. Stir gently until just combined
- Pour batter into prepared pan. Sprinkle extra chopped pistachios on top
- Bake 50-60 minutes until toothpick comes out clea
- Cool in pan 15 minutes, then transfer to wire rack
Notes
Use room temperature eggs and milk for smoother batter.
Do not overmix batter – stir until flour just disappears.
For best results, cool completely before slicing.
Store in airtight container at room temperature for up to 3 days.
