- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 cup finely chopped pistachios
- 1/4 tsp salt
- Extra powdered sugar, for rolling
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper.
- 2. In a large bowl, cream butter and powdered sugar until light and fluffy.
- 3. Mix in vanilla extract.
- 4. Gradually add flour and salt, mixing until combined.
- 5. Fold in chopped pistachios to form a soft dough.
- 6. Roll dough into 1-inch balls and place on prepared baking sheets.
- 7. Bake for 12โ15 minutes, until cookies are set but not browned.
- 8. Cool cookies for 5 minutes, then roll in powdered sugar while still warm.
- 9. Allow to cool completely, then roll in powdered sugar a second time for a snowy finish.
Notes
- These cookies are also known as Mexican Wedding Cookies or Snowball Cookies.
- For a festive twist, add a hint of almond extract or use half pistachios and half pecans.
