  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pistachios
  • 1/4 tsp salt
  • Extra powdered sugar, for rolling

Instructions

  • 1. Preheat oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper.
  • 2. In a large bowl, cream butter and powdered sugar until light and fluffy.
  • 3. Mix in vanilla extract.
  • 4. Gradually add flour and salt, mixing until combined.
  • 5. Fold in chopped pistachios to form a soft dough.
  • 6. Roll dough into 1-inch balls and place on prepared baking sheets.
  • 7. Bake for 12โ€“15 minutes, until cookies are set but not browned.
  • 8. Cool cookies for 5 minutes, then roll in powdered sugar while still warm.
  • 9. Allow to cool completely, then roll in powdered sugar a second time for a snowy finish.
