Description
Savory, golden pastries filled with seasoned mashed potatoes—perfect as an appetizer, side dish, or snack. Crispy on the outside and soft on the inside.
Ingredients
2 cups mashed potatoes (cooled)
1/2 cup shredded cheese (cheddar or mozzarella)
1/4 cup chopped green onions or chives
Salt and pepper to taste
1/2 tsp garlic powder (optional)
1 tsp paprika (optional)
1 package puff pastry sheets, thawed
1 egg, beaten (for egg wash)
Flour for dusting
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a bowl, mix mashed potatoes, cheese, green onions, and seasonings until well combined.
3. Unfold puff pastry sheets on a lightly floured surface and cut into squares (about 4×4 inches).
4. Place 1–2 tablespoons of the potato filling in the center of each square.
5. Fold over into triangles or rectangles and press edges to seal (use a fork for crimped edges).
6. Brush tops with beaten egg.
7. Place filled pastries on the prepared baking sheet.
8. Bake for 18–22 minutes or until golden brown and puffy.
9. Let cool slightly before serving.
Notes
You can add cooked crumbled bacon or sautéed mushrooms to the filling.
Make them ahead and reheat in a toaster oven for a crisp finish.
Great as a side dish with soup or salad.
Store leftovers in an airtight container in the fridge for up to 3 days.
