Description

- 2 cups mashed potatoes (cooled)
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup chopped green onions or chives
- Salt and pepper to taste
- 1/2 tsp garlic powder (optional)
- 1 tsp paprika (optional)
- 1 package puff pastry sheets, thawed
- 1 egg, beaten (for egg wash)
- Flour for dusting
Instructions
- 1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 2. In a bowl, mix mashed potatoes, cheese, green onions, and seasonings until well combined.
- 3. Unfold puff pastry sheets on a lightly floured surface and cut into squares (about 4×4 inches).
- 4. Place 1–2 tablespoons of the potato filling in the center of each square.
- 5. Fold over into triangles or rectangles and press edges to seal (use a fork for crimped edges).
- 6. Brush tops with beaten egg.
- 7. Place filled pastries on the prepared baking sheet.
- 8. Bake for 18–22 minutes or until golden brown and puffy.
- 9. Let cool slightly before serving.
Notes
- You can add cooked crumbled bacon or sautéed mushrooms to the filling.
- Make them ahead and reheat in a toaster oven for a crisp finish.
- Great as a side dish with soup or salad.
- Store leftovers in an airtight container in the fridge for up to 3 days.
