Ingredients

1/4 cup Roasted Peanuts, chopped
1/2 cup Dark Chocolate Chips (60-70%)
1 teaspoon Coconut Oil (optional, for melting chocolate)
1/4 teaspoon Flaky Sea Salt
Instructions
- First, carefully pit your Medjool dates. Gently slice each date lengthwise, not all the way through, to create a pocket for the filling
- Next, combine peanut butter with a tiny pinch of sea salt. Spoon about half a teaspoon into each date pocket. Press a few chopped peanuts into the peanut butter
- After stuffing, melt dark chocolate chips. Use a microwave-safe bowl in 30-second intervals, stirring well, or use a double boiler. Add coconut oil if you prefer a thinner chocolate coating
- Finally, dip each peanut-stuffed date into the melted chocolate, ensuring full coverage. Place the chocolate-coated Snickers Dates onto a parchment-lined baking sheet. Sprinkle immediately with flaky sea salt. Refrigerate for at least 30 minutes, until chocolate sets firm
Notes
Use fresh, soft Medjool dates; they are naturally sweet and gooey, forming the best base. If dates are firm, soak them in warm water for 10 minutes, then pat dry, which makes stuffing easier.
Don't overheat your chocolate; it can become grainy.
