Soft and chewy strawberry cheesecake cookies filled with a creamy cheesecake center and studded with strawberry pieces perfectly indulgent and fruity.

- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup freeze-dried strawberries, crushed
- Cheesecake filling:
- 4 oz cream cheese, softened
- 3 tbsp powdered sugar
- 1/2 tsp vanilla extract
- Optional topping:
- White chocolate drizzle or extra strawberry pieces
Instructions
- 1. In a small bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Scoop small teaspoon-sized portions onto a parchment-lined plate and freeze for at least 30 minutes.
- 2. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- 3. In a large bowl, cream butter and sugar until light and fluffy.
- 4. Add egg and vanilla extract; mix until combined.
- 5. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- 6. Gradually mix dry ingredients into the wet mixture until a dough forms.
- 7. Fold in crushed freeze-dried strawberries.
- 8. Scoop tablespoon-sized portions of dough, flatten slightly, and place a frozen cream cheese ball in the center. Wrap dough around filling and seal.
- 9. Place stuffed cookies on the baking sheet, spacing apart.
- 10. Bake for 10–12 minutes, or until edges are lightly golden.
- 11. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
- 12. Drizzle with melted white chocolate if desired.
Notes
- Freeze the cream cheese filling to make stuffing easier.
- Using freeze-dried strawberries prevents excess moisture in the dough.
- Store cookies in the refrigerator to keep the cheesecake centers fresh.
