Description

Soft and chewy strawberry cheesecake cookies filled with a creamy cheesecake center and studded with strawberry pieces—perfectly indulgent and fruity.


Ingredients

Scale

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1 large egg

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1/2 cup freeze-dried strawberries, crushed

Cheesecake filling:

4 oz cream cheese, softened

3 tbsp powdered sugar

1/2 tsp vanilla extract

Optional topping:

White chocolate drizzle or extra strawberry pieces


Instructions

1. In a small bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Scoop small teaspoon-sized portions onto a parchment-lined plate and freeze for at least 30 minutes.

2. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

3. In a large bowl, cream butter and sugar until light and fluffy.

4. Add egg and vanilla extract; mix until combined.

5. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.

6. Gradually mix dry ingredients into the wet mixture until a dough forms.

7. Fold in crushed freeze-dried strawberries.

8. Scoop tablespoon-sized portions of dough, flatten slightly, and place a frozen cream cheese ball in the center. Wrap dough around filling and seal.

9. Place stuffed cookies on the baking sheet, spacing apart.

10. Bake for 10–12 minutes, or until edges are lightly golden.

11. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

12. Drizzle with melted white chocolate if desired.

Notes

Freeze the cream cheese filling to make stuffing easier.

Using freeze-dried strawberries prevents excess moisture in the dough.

Store cookies in the refrigerator to keep the cheesecake centers fresh.

Best enjoyed chilled or at room temperature.
