Description
Buttery shortbread cookies topped with soft caramel and coated in smooth chocolate just like a homemade Twix bar, but in cookie form.

- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup soft caramels (about 25 pieces) or homemade caramel
- 2 tablespoons heavy cream
- 1 1/2 cups chocolate chips or chopped chocolate
- 1 tablespoon coconut oil or shortening (optional for smoother coating)
Instructions
- 1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- 2. Cream butter and sugar until light and fluffy, then mix in vanilla.
- 3. Add flour and salt, mixing until a soft dough forms.
- 4. Roll dough to 1/4-inch thickness and cut into circles or rectangles. Transfer to prepared baking sheets.
- 5. Bake for 10–12 minutes or until edges are lightly golden. Cool completely.
- 6. Melt caramels with heavy cream in a microwave or saucepan until smooth.
- 7. Spoon or pipe a layer of caramel onto each cooled cookie. Chill for 10 minutes to set.
- 8. Melt chocolate (with coconut oil if using) until smooth.
- 9. Dip each cookie fully in chocolate or drizzle over the top. Place on parchment to set.
- 10. Chill again until chocolate is firm, then serve.
Notes
- If caramel is too firm, add another splash of cream to soften.
- For a crisper Twix-style texture, chill the dough before baking.
- Use high-quality chocolate for the best coating consistency.
