Notes
Use very ripe bananas for best flavor and easy mashing.
Do not overmix the batter to keep pancakes fluffy.
Let the batter rest for 5 minutes so the oats soften.
Cook on medium-low heat to prevent burning the protein powder.
Make small pancakes for easier flipping.
Taste the batter and adjust sweetness if needed.
Storage: Store in an airtight container in the fridge for up to 4 days, or freeze for up to 2 months. Reheat in a toaster or microwave.
Substitutions: Swap oats for almond flour to make grain-free. Use plant-based protein powder and a flax egg for vegan. Try chocolate protein powder for a dessert-like flavor. Add blueberries or chocolate chips. Use applesauce instead of oil for lower fat.
