Ingredients
4 large Egg whites, room temperature
1/2 cup Granulated sugar
1/2 teaspoon Cream of tartar
1 teaspoon Vanilla extract
1 tablespoon Cornstarch
Instructions
- Preheat oven to 300°F. Line a baking sheet with parchment paper
- Beat egg whites and cream of tartar until foamy
- Slowly add sugar, beating until stiff, glossy peaks form
- Gently fold in vanilla and cornstarch
- Scoop mounds onto prepared baking sheet
- Bake for 25-30 minutes until lightly golde
- Cool completely before serving (they are delicate)
Notes
For best results, ensure bowl is completely clean and dry, and no yolk gets into the whites.
Room temperature egg whites whip higher. Avoid overbaking; cakes should be just set.
Cool in turned-off oven with door slightly open for best texture.
Store in airtight container at room temperature for up to 2 days. Do not refrigerate.
Variations: substitute almond extract for vanilla, add cocoa powder, or fold in fresh berries carefully.
