Description

Soft, fluffy cinnamon rolls made with protein-packed cottage cheese are a lighter twist on the classic breakfast treat thatโ€™s still perfectly sweet, gooey, and delicious.

  • 1 cup cottage cheese
  • 1/4 cup sugar
  • 1/4 cup milk

  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • For the filling:
  • 2 tbsp melted butter
  • 1/3 cup brown sugar
  • 1 1/2 tsp cinnamon
  • For the glaze:
  • 1/2 cup powdered sugar
  • 1โ€“2 tbsp milk or cream
  • 1/2 tsp vanilla extract

Instructions

  • 1. Preheat oven to 375ยฐF (190ยฐC). Grease a 9-inch round baking dish or pie pan.
  • 2. In a blender or food processor, blend cottage cheese, sugar, milk, melted butter, and vanilla until smooth.
  • 3. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  • 4. Add the blended cottage cheese mixture to the dry ingredients and stir until a soft dough forms. Knead lightly until smooth.
  • 5. Roll the dough out on a floured surface into a rectangle (about 10×14 inches).
  • 6. Brush with melted butter, then sprinkle evenly with brown sugar and cinnamon.
  • 7. Starting from the long edge, roll the dough tightly into a log. Slice into 9โ€“10 even rolls.
  • 8. Place rolls in the prepared pan and bake for 20โ€“25 minutes, until golden brown.
  • 9. While the rolls bake, whisk together powdered sugar, milk, and vanilla for the glaze.
  • 10. Drizzle the glaze over warm rolls before serving.

  • Use full-fat cottage cheese for the softest texture.
  • Add chopped nuts or raisins to the filling for extra flavor.
  • These are best served fresh but can be reheated for a few seconds in the microwave.
