Description

Dorayaki is a classic Japanese dessert made with two fluffy honey pancakes filled with sweet red bean paste. Soft, tender, and lightly sweet, these handheld treats are perfect for tea time or as a delightful snack.


Ingredients

  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1 tablespoon honey
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoons water
  • 1/2 teaspoon vanilla extract
  • 1 cup sweet red bean paste (anko)
  • Neutral oil, for greasing the pan

Instructions

  • 1. In a large bowl, whisk together the eggs, sugar, and honey until smooth and slightly frothy.
  • 2. Add the flour and baking powder, then mix until just combined.
  • 3. Stir in the water and vanilla extract until a smooth batter forms. Let the batter rest for 15 minutes.
  • 4. Heat a nonstick skillet over medium-low heat and lightly grease with a small amount of oil, wiping away any excess.
  • 5. Pour about 1/4 cup of batter onto the skillet to form a small round pancake.
  • 6. Cook until bubbles appear on the surface and the edges begin to set, about 2 minutes.
  • 7. Flip and cook for another 30 to 60 seconds until lightly golden. Repeat with the remaining batter.
  • 8. Allow the pancakes to cool completely.
  • 9. Spread about 2 tablespoons of sweet red bean paste onto the flat side of one pancake and sandwich with another pancake.
  • 10. Gently press the edges together and serve immediately or wrap individually for later.

Notes

Letting the batter rest helps create fluffier pancakes.

Keep the heat low to achieve an even golden-brown color.

Store assembled dorayaki in an airtight container at room temperature for up to 1 day or refrigerate for up to 3 days.

Try filling with whipped cream, chocolate spread, or custard for a fun variation.
