A creamy, no-bake coffee cheesecake dessert that captures the rich, comforting flavor of coffee in an easy-to-make treat. Perfect for busy days or as a special reward, it combines a chocolate graham cracker crust with a robust coffee-infused cream cheese filling.
Ingredients
2 cups chocolate graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter
16 oz full-fat cream cheese
1 cup powdered sugar
1 tbsp vanilla extract
2 tbsp instant espresso powder
1 tbsp hot water
8 oz frozen whipped topping
Instructions
- Mix chocolate graham cracker crumbs, granulated sugar, and melted butter. Press firmly into a 9×13 dish and chill for 10 minutes
- Dissolve instant espresso powder in hot water until smooth. Let cool slightly
- Beat softened cream cheese until smooth. Add powdered sugar and vanilla extract, beating until combined
- Pour cooled espresso mixture into cream cheese mixture and beat until fully combined and creamy
- Gently fold thawed whipped topping into coffee-cheese mixture until no white streaks remai
- Spread filling evenly over chilled crust. Cover and refrigerate for at least 4 hours or overnight
Notes
For clean slices, dip knife in hot water before cutting.
Store covered in refrigerator for up to 5 days. Does not freeze well.
Can be made 2 days ahead. Overnight chilling yields best texture and flavor.
