Description

These Flourless Cottage Cheese Pancakes are a light, fluffy, and protein-packed breakfast that is naturally gluten-free. Made with cottage cheese, eggs, and oats, they are surprisingly airy and satisfying, making them a perfect weekend staple for everyone, including those with gluten sensitivities.


Ingredients

1 cup Full-fat cottage cheese
4 Large eggs
1 teaspoon Vanilla extract
1/2 cup Rolled oats (gluten-free if needed)
1/2 teaspoon Baking powder
1/4 teaspoon Salt
For cooking: Coconut oil or butter for greasing


Instructions

  1. Add cottage cheese, eggs, vanilla, oats, baking powder, and salt to a blender. Blend until completely smooth. Let the batter rest for 5 minutes
  2. Place a non-stick skillet over medium heat. Add a little coconut oil or butter. Let it melt and get hot
  3. Pour about 1/4 cup of batter per pancake onto the hot skillet. Cook for 2-3 minutes, until bubbles form on the surface and edges look set
  4. Flip the pancake gently. Cook for another 1-2 minutes, until golden brown and cooked through
  5. Repeat with the remaining batter. Serve your pancakes warm

Notes

Don't over-blend the batter; blend just until smooth to avoid gummy pancakes.

Letting the batter rest for 5 minutes allows the oats to absorb liquid, creating fluffier pancakes.

Use medium heat to ensure even cooking and avoid burning the outside while the inside remains raw.

Flip only when bubbles form all over the surface and the edges look slightly dry.

To store, cool pancakes completely, then place in an airtight container in the refrigerator for up to 4 days. To freeze, layer between parchment paper in a freezer bag for up to 2 months. Reheat in a toaster, air fryer at 350°F for 3 minutes, or in a skillet over low heat.
