Description

No-bake frozen cheesecake bars with a buttery graham cracker crust, creamy cheesecake filling, and a vibrant strawberry swirl. Perfect for hot days and last-minute gatherings.

16 oz Full-fat cream cheese, softened
14 oz Sweetened condensed milk
2 tbsp Lemon juice, freshly squeezed

2 cups Frozen strawberries, thawed slightly
¼ cup Strawberry jam


Instructions

  1. Mix graham cracker crumbs, melted butter, and sugar. Press firmly into an 8×8-inch pan lined with parchment paper. Freeze while preparing filling
  2. Beat softened cream cheese until smooth. Gradually add sweetened condensed milk, then lemon juice and vanilla. Beat until smooth and lump-free
  3. In a small bowl, mash slightly thawed strawberries and stir in strawberry jam to create a thick puree
  4. Pour cream cheese mixture over chilled crust. Drop spoonfuls of strawberry mixture on top and gently swirl with a knife. Do not overmix
  5. Freeze for at least 6 hours or overnight. Lift out using parchment, slice with a hot knife, and serve immediately

Notes

Use full-fat cream cheese to avoid icy texture. Always soften cream cheese completely.

Press crust firmly to prevent crumbling. Do not skip lemon juice—it brightens the flavor.

For clean cuts, dip knife in hot water and wipe between slices.

Store in airtight container in freezer for up to 1 month with parchment between layers. Let sit 5 minutes at room temp before serving. Do not refreeze after thawing.
