Ingredients

2 cups Old-fashioned rolled oats
1/2 cup Honey
1/2 cup Creamy peanut butter
1/3 cup Mini chocolate chips (optional)

Instructions

  1. Line a 9×9 inch pan with parchment paper, leaving overhang for easy lifting
  2. Combine honey and peanut butter in a small saucepan. Heat over low heat, stirring constantly until smooth and well combined
  3. Remove from heat. Stir in vanilla extract and salt
  4. Pour the warm mixture over the oats in a large bowl. Mix thoroughly until every oat is coated
  5. Fold in the chocolate chips. Transfer the mixture to the prepared pan. Press down firmly and evenly using a flat-bottomed glass for best results
  6. Refrigerate for at least 2 hours. Then, lift the block out using the parchment paper. Slice into bars

Notes

Pressing the mixture firmly is critical to prevent crumbling. Use a heavy object or slightly damp hands.

Use old-fashioned rolled oats, not quick oats, for the best texture.

Do not skip refrigeration time; it allows the bars to set properly.
