A hearty and rustic Irish pasties recipe, featuring a flaky pastry crust filled with a savory mixture of beef, potatoes, onion, and carrot. Perfect for a comforting family meal, lunchboxes, or freezing for later.
Ingredients
3 cups All-purpose flour
1 cup Cold butter, cubed
0.5 cup Ice water
1 tsp Salt
1 lb Beef sirloin or chuck, finely chopped
1 cup Yukon Gold potatoes, diced small
1 medium Yellow onion, finely chopped
1 medium Carrot, diced small
0.25 cup Beef broth
To taste Salt, pepper, fresh thyme
Instructions
- Make the pastry: Whisk flour and salt. Cut in cold butter with a pastry blender until mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, tossing with a fork until dough holds together. Form two disks, wrap in plastic, and refrigerate for 30 minutes
- Prepare the filling: In a bowl, combine chopped beef, potatoes, onion, carrot, broth, salt, pepper, and thyme. Mix thoroughly
- Preheat oven to 375°F (190°C). On a floured surface, roll one pastry disk to 1/8-inch thickness. Cut out 6-inch circles. Place about 1/3 cup of filling on one half of each circle
- Fold the empty half over the filling. Press edges to seal, then crimp with a fork. Cut a small steam vent on top. Brush with egg wash (optional)
- Bake for 45-50 minutes until golden brown. Let rest 10 minutes before serving. Serve warm
Notes
For a vegetarian version, replace beef with extra mushrooms and root vegetables.
To freeze: Wrap uncooked pasties tightly in foil and freeze for up to 3 months. Bake from frozen at 375°F for about 60 minutes.
Store leftover baked pasties in an airtight container in the fridge for up to 3 days. Reheat in a 350°F oven for 10-15 minutes.
