Description

Lemon Meringue Pie Bites capture the bright lemon flavor and toasted meringue of classic lemon meringue pie in a bite-sized, fuss-free phyllo shell. Mini phyllo shells are filled with lemon curd, topped with a simple egg-white meringue, broiled until golden, and finished with fresh lemon zest. They come together quickly and are perfect for parties, potlucks, and weeknight treats.

Ingredients

Scale
  • Mini phyllo shells  15 shells
  • Lemon curd  1 cup
  • Egg whites  2 large
  • Cream of tartar 1/4 tsp
  • Granulated sugar 1/3 cup
  • Fresh lemon zest  1 tsp

Instructions

  • 1. Preheat your oven to 350°F.
  • 2. Arrange the phyllo shells on a baking sheet.
  • 3. Spoon lemon curd into each shell.
  • 4. Bake for 5 minutes, then cool.
  • 5. Beat egg whites with cream of tartar until foamy.
  • 6. Slowly add sugar and beat until stiff peaks form.
  • 7. Pipe meringue onto each filled shell.
  • 8. Broil for 1 to 2 minutes until golden.
  • 9. Top with lemon zest and serve.

Notes

Keep your bowl and beaters spotless. Any grease ruins meringue. Therefore, wipe everything with vinegar first. Also, watch the broiler closely. Meringue browns fast.

Store leftovers in the fridge for up to two days. However, meringue softens over time. Therefore, enjoy these Lemon Meringue Pie Bites fresh when possible.

No phyllo shells? Use mini tartlet crusts instead. No lemon curd? Mix fresh lemon juice, zest, and sweetened condensed milk. For a twist, swap in lime curd to make Lime Meringue Pie Bites. You can also add a pinch of salt to the meringue for balance.

Pair these Lemon Meringue Pie Bites with hot tea or iced coffee. They also shine on a dessert platter with fresh berries. For brunch, add them beside a light salad.
