Ingredients
1 ½ cups Graham cracker crumbs
5 tablespoons Melted butter
16 oz Cream cheese (softened)
½ cup Powdered sugar
½ cup Mountain Dew Baja Blast soda
1 tablespoon Lime zest
3–4 drops Blue or teal food coloring
2 cups Whipped topping (like Cool Whip)
Instructions
- Combine graham cracker crumbs and melted butter. Press mixture firmly into a 9-inch springform pan. Place in fridge to chill
- Beat softened cream cheese until smooth. Gradually add powdered sugar and mix until creamy
- Slowly stir in Baja Blast soda and lime zest. Fold in food coloring
- Gently fold in whipped topping until combined
- Pour filling onto chilled crust. Smooth top
- Refrigerate for at least 4 hours, preferably overnight, until set
- Serve cold. For clean slices, use a knife dipped in hot water and patted dry
Notes
Use room temperature cream cheese to avoid lumps.
Do not overmix the soda; gentle stirring keeps the filling fluffy.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Do not freeze, as texture may change.
