These Oatmeal Cottage Cheese Pancakes are fluffy, protein-packed, and easy to make in a blender. With oats for fiber and cottage cheese for protein, they keep you full until lunch. They freeze beautifully, making them perfect for meal prep.
Ingredients
- Old-fashioned rolled oats: 1 cup
- Cottage cheese (full-fat or 2%): 1 cup
- Large eggs: 4
- Vanilla extract: 1 teaspoon
- Baking powder: 1 teaspoon
- Salt: 1/4 teaspoon
- Butter or oil (for the pan): As needed
Instructions
1. 1. Add oats, cottage cheese, eggs, vanilla, baking powder, and salt to a blender.
2. 2. Blend for 30 seconds until smooth. Scrape down the sides if needed.
3. 3. Let the batter rest for 5 minutes. This thickens your oatmeal cottage cheese pancakes.
4. 4. Heat a non-stick skillet over medium heat. Add a little butter or oil.
5. 5. Pour 1/4 cup of batter per pancake. Cook for 2-3 minutes until bubbles form.

Notes
Don’t skip the resting time. It makes a huge difference. Keep your heat at medium; high heat burns the outside before the inside cooks. Grease your pan between batches.
Use a thin spatula for flipping to keep pancakes intact. Taste the first one and adjust sweetness or salt for the next batch.
Store leftovers in an airtight container in the fridge for up to 4 days. Freeze for up to 2 months: place in a single layer on a baking sheet, then transfer to a freezer bag. Reheat in a toaster or microwave.
Swap rolled oats for quick oats (texture changes slightly). For vegan, use flax egg (less fluffy). Add protein powder, mashed banana, chocolate chips, or blueberries.
