Ingredients

Scale

1 large Ripe Avocado
3 tbsp Unsweetened Cocoa Powder
15 drops Liquid Stevia
0.5 cup Unsweetened Shredded Coconut


Instructions

  1. Halve the avocado, remove the pit, and scoop the flesh into a bowl. Mash well with a fork until completely smooth
  2. Add the cocoa powder and stir thoroughly. Then add the liquid stevia and mix until combined. The mixture should be thick and fudgy
  3. Place the shredded coconut on a plate. Using a spoon, scoop out small portions of the mixture and roll between your palms into 1-inch balls
  4. Roll each ball in the coconut to coat completely. Place on a tray. Serve immediately or chill before serving

Notes

Use a very ripe avocado for the creamiest texture.

If the dough is too sticky, add a little more cocoa powder. If too dry, add a drop of water.

Chilling the dough for 10 minutes makes rolling easier.

Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
