Ingredients
1 large Ripe Avocado
3 tbsp Unsweetened Cocoa Powder
15 drops Liquid Stevia
0.5 cup Unsweetened Shredded Coconut
Instructions
- Halve the avocado, remove the pit, and scoop the flesh into a bowl. Mash well with a fork until completely smooth
- Add the cocoa powder and stir thoroughly. Then add the liquid stevia and mix until combined. The mixture should be thick and fudgy
- Place the shredded coconut on a plate. Using a spoon, scoop out small portions of the mixture and roll between your palms into 1-inch balls
- Roll each ball in the coconut to coat completely. Place on a tray. Serve immediately or chill before serving
Notes
Use a very ripe avocado for the creamiest texture.
If the dough is too sticky, add a little more cocoa powder. If too dry, add a drop of water.
Chilling the dough for 10 minutes makes rolling easier.
Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
