Ingredients
1 cup Natural Peanut Butter
1/2 cup Unsalted Butter
1/2 cup Powdered Erythritol
1 teaspoon Vanilla Extract
1/4 teaspoon Salt
Instructions
- Melt the Base: In a medium saucepan over low heat, combine the peanut butter and butter. Stir constantly until completely smooth and melted
- Sweeten the Mix: Remove the pan from the heat. Immediately stir in the powdered erythritol, vanilla extract, and salt. Mix very well until the batter is thick and glossy
- Set the Fudge: Pour the mixture into a parchment-lined 8×8 inch baking dish. Spread it evenly with a spatula
- Chill to Perfection: Refrigerate the fudge for at least 1 hour, or until completely firm
- Slice and Serve: Lift the set fudge out of the pan using the parchment. Cut into 16 small squares
Notes
Do not overheat the mixture; low and slow is key.
Stir the powdered sweetener in thoroughly to prevent lumps.
Be patient and let the fudge chill for a full hour to set properly.
Store in an airtight container in the refrigerator for up to two weeks or freeze for up to three months.
Substitute peanut butter with almond butter or sunflower seed butter for variation. For vegan version, replace butter with coconut oil.
