Description
A light and airy cake with cream cheese, perfect for celebrations or quiet weekends. It has a melt-in-your-mouth texture and subtle tang from cream cheese.
Ingredients
2 cups All-purpose flour
1 ½ cups Granulated sugar
2 teaspoons Baking powder
½ teaspoon Salt
8 ounces Full-fat cream cheese, softened
½ cup Unsalted butter, softened
3 large Eggs, room temperature
1 teaspoon Vanilla extract
¾ cup Buttermilk
Instructions
- Preheat oven to 350°F. Grease a 9-inch round pa
- Beat cream cheese and butter together until smooth. Gradually add sugar, creaming until light and fluffy
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract
- In a separate bowl, whisk together flour, baking powder, and salt
- Alternately add dry ingredients and buttermilk to the batter, beginning and ending with dry ingredients. Mix until just combined; do not overmix
- Pour batter into prepared pan. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clea
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely
Notes
Use room temperature ingredients for best texture.
For a citrus twist, add lemon zest to the batter.
Store leftovers in an airtight container in the refrigerator for up to 4 days. Bring to room temperature before serving.
Freeze the cake wrapped tightly in plastic wrap and foil for up to 3 months.
To reheat, warm slices in a 300°F oven for 5 minutes.
