This gluten free cloud cake is a light, airy, and naturally flourless dessert that rises tall and proud. Made with simple ingredients like eggs, sugar, and cornstarch, it’s perfect for celebrations and loved by everyone, including those without gluten sensitivities.
Ingredients
6 large eggs (separated)
¾ cup granulated sugar
¼ cup cornstarch (or potato starch)
1 teaspoon vanilla extract
½ teaspoon cream of tartar
Pinch of salt
Instructions
- Preheat oven to 350°F. Line bottom of a 9-inch springform pan with parchment paper. Do not grease sides
- In a clean, large bowl, beat egg whites with cream of tartar and salt until soft peaks form. Gradually add half the sugar, continue beating until stiff, glossy peaks form
- In a separate bowl, whisk egg yolks with remaining sugar and vanilla until thick and pale. Fold in cornstarch gently
- Take one-third of the egg whites and fold them into the yolk mixture carefully. Gently fold in remaining whites. Do not overmix. Pour batter into pa

Notes
Use a completely clean bowl for egg whites; any grease will ruin the cake.
Fold batter gently; do not stir.
Always let cake cool upside down to prevent deflating.
Store in an airtight container at room temperature for up to 2 days. Do not refrigerate.
For lemon flavor, add 1 teaspoon lemon zest; for chocolate, fold in 2 tablespoons unsweetened cocoa powder.
Arrowroot or potato starch can replace cornstarch.
